Colossal Stuffed Chocolate Chip Cookie

Ingredients

  • ½ cup white sugar
  •  ¾ cup plus 2 teaspoon packed brown sugar
  • ½ cup unsalted butter, melted
  • ½ teaspoon kosher salt
  • 1 whole egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • 7 oz chocolate chips
  • Stuffing of choice (marshmallow fluff, Nutella, peanut butter, etc.)

Directions

  • Melt the butter
  • In a stand mixer with paddle attachment, mix the brown sugar and white sugar on low speed.
  • Add the melted butter and combine.
  • Add the whole egg.
  • Increase mixer speed to medium and add egg yolk.
  • Add vanilla extract.
  • Add the flour, salt, and baking soda.
  • Fold in the chocolate chunks.
  • Let rest overnight. You can also store the stuffing in the fridge so it’s easier to work with later.
  • Preheat oven to 350 degrees.
  • Roll out cookie dough into desired size.
  • Add 1 tablespoon of stuffing to the center of each dough round, covering completely with dough.
  • Depending on the size of the cookie, cook for 8-15 minutes total.
  • After cooking for 6 minutes, pick up the pan and drop it back on the rack (this helps stop the rise of the cookie, resulting in a chewier cookie).
  • Cook 3 more minutes then drop pan again.
  • Finish cooking the cookies.
  • Cool and enjoy.
